I’m learning about online payment systems for my new store and came across Authorize.Net. I’m a bit confused—is Authorize.Net considered a payment processor, or does it only act as a gateway between my website and a processor?

AuthorizeNet is simply a payment gateway. So think of them more as the hardware needed to accept online payments. You would still have to configure a merchant account with separate payment processor compatible with AuthorizeNet
